When our friends at Pedro Sanchez told us about a new Japanese Restaurant we couldn’t wait to get the inside scoop. The owner, Lin, was kind enough to invite us in for a sneak peak before the opening. A quite sassy lady with a Gastronomy background both professionally and passionately, she whole-heartedly loves fine cuisine and is excited to share with Zurich the secrets she’s collected during her travels and life abroad…authentic Japanese cuisine! We are confident you will love both her and Sushi Shin.
As we sit together admiring her hand-made Washi (traditional Japanese paper) silver & gold table linens, it’s clear that the restaurant concept is superior ingredients, expert preparation, amazing taste and an all around elegant experience.
The Business Crowd can look forward to a Bento Box Style Lunch Menu while evening guests may choose from 1-2 set 12-15 course Japanese menus in the Kaiseki style. This traditionally includes an appetizer, soup, sashimi, and several steamed, grilled and simmered dishes.
In between chatting with us, Lin is busy receiving packages and hiring staff. She spent the night before loading a 189 kilo tuna and preparing it for the 55-degree freezer (the essential proper temperature for precise flavor and care). A perfectionist for sure, Lin is working hard sourcing brand labels like Akazu and Yokoi and designing the interiors with help from industry experts like the former Director at Bally.
Lin is also quite busy recruiting chefs direct from Japan. Their kitchen apron’s accolades include 1 Michelin Star, a chef who has managed 30+ restaurants in Asia and one you might know from his appearance as a guest chef at the Dolder.
